Indian Homemade Chicken Soup





With the onset of winter, what could be the best delight than relishing to your favourite Chicken Soup, which not only keeps cold at bay, but also warms up your soul and mind.
A healthy soup has all the intrinsic ingredients like fresh low-fat ingredients and a minimum of salt and extra fat to give you the best of what it can offer, and all of these can easily be found in the chicken soup.
So let us take a look at the ingredients and the homemade recipe. It can be made in so many ways as soup is a dish that can always be experimented with.

What it has to offer:  Each serving provides 288kcal, 28g protein, 11.5g carbohydrate (of which 7g sugars), 14g fat (of which 6.5g saturates), 3.4g fibre and 0.7g salt.

Ingredients:
  • onions, sliced
  • carrots, finely diced
  • Finely chopped garlic ( 2 strands )
  • 450g/1lb cooked chicken, skinned and shredded
  • 25g/2oz plain flour
  • 2 litres/2 pints chickenstock
  • 55g/2oz butter
  • Half lemon
  • salt and freshly ground black pepper
  • Chopped coriander leaves (for garnish)
         Procedure:

  1. Heat the saucepan at a medium flame, melt the butter in that and fry the onions, garlic and carrots until it gently starts getting soft.
  2. Add some flour in it, and the chicken stock, stir the mixture and bring it to boil.
  3. Add the cooked chicken, and cook until heated through. Adjust the seasoning.
  4. Now add some salt (according to taste), black pepper (1/2 tsp.), squeeze the lemon.
    Now Garnish it with chopped coriander leaves and serve it warm.
